SUN-KISSED CITRUS MIGHTY MATCHA CHIA PUDDING

It's starting to feel like summer, and we've got the perfect sun-kissed recipe which is basically summer in a bowl!

Ingredients

1 1/2 cups of cashew nut milk (or your preferred milk)
1Tbsp matcha green tea powder
1 banana
1 handful fresh mint leaves
Squeeze of lemon juice
Sweetener of choice if preferred (maple syrup, honey)
1/4 cup chia seeds

Toppings:
Little Moons Yuzu Lemon mochi
Handful of chopped strawberries
Mint leaves

Instructions

  1. Pop the milk, matcha, banana, mint leaves, lemon juice and sweetener into a blender.
  2. Whizz up. Add the chia seeds and mix thoroughly. Pop in the fridge for about 2-3 hours to set.
  3. Top with chopped strawberries, crushed mint leaves and your Yuzu Lemon treat
